Ranch Steak Dinner
For the marinade:
½ teaspoon salt
½ teaspoon dry oregano leaves
½ teaspoon ground black pepper
2 Tablespoons apple cider vinegar
2 Tablespoons vegetable oil
1 Tablespoon Country style Dijon mustard
1 teaspoon minced fresh garlic
For the dinner part:
1 ½ pounds sirloin steak, tenderized if desired
2 medium carrots cut into 1” pieces
1 medium onion, sliced 1/4” thick
2 medium tomatoes cut into 2 inch pieces
1 medium green pepper, cut into 1 inch strips
In large skillet stir together all marinade ingredients. Place steak in skillet and coat both sides with marinade. In the same skillet, place carrots and onion around steak in marinade mixture. Cover; cook over medium high heat, turning once, until browned (10 to 12 minutes) Reduce heat to medium. Add tomatoes and green pepper. Cover; cook, stirring occasionally, until vegetables are crispy tender and meat reaches desired doneness….6 to 7 more minutes for medium.
